How fluffy nougat is made from honey and almonds โ using a family recipe

If you’re travelling through the Drรดme โ more precisely, in the southern Provenรงal part around Montรฉlimar โ and looking for a little stop that everyone will enjoy, make sure to drop by Nougats Soubeyran.
Our plan was just to pick up a few local treats โ something a bit more special than you’d find back home. We didnโt expect to learn so much about the craftsmanship and quality behind the ingredients. But thatโs exactly what made the visit so memorable: once you understand how much tradition and care go into a single piece of nougat, it really does taste even better.
A small museum, live production and sweet samples included
Itโs not a huge museum, but a charming mix of live production, a small exhibition, and plenty of tasting stations. Right at the entrance, everyone gets a little sample bag with the three classic nougat flavours โ a sweet way to start.
Then itโs on through the exhibition, which is genuinely interesting for kids too: there are old machines, sound installations, short videos โ and plenty of chances to look, listen, and be curious.
Kidsโ favourite: the glass-walled production line
The absolute highlight for our children was the glass-walled production line, where you can watch the still-warm nougat being poured into big moulds. Yes, noses were literally pressed up against the glass. And honestly? We adults were just as fascinated.
You can instantly see the care and craftsmanship that goes into every single batch.
And then comes the moment everyoneโs been waiting for: the tasting. But itโs not just about grabbing a bite โ itโs about really savouring it. First you smell it, then you taste. And if you pay attention, youโll pick up all the little things you just learned about: the lavender honey, the roasted almonds, the time and love in every piece.
Coffee, ice cream & something to take home
After your tour, head next door to the cosy cafรฉ for a coffee โ or grab an ice cream for the kids. And yes, of course we picked up a few boxes of nougat to take home. A small, sweet piece of holiday in your suitcase is always worth it, right?
